Effects of Sorghum Grain and Wort Composition on Dry Grind Fermentation Performance: A Model for Baijiu Production

Sorghum grain is the principal raw material for Baijiu production, but effects of and wort composition on fermentation performance are unclear. Ethanol production at laboratory scale using grains 11 commercial sorghum cultivars from a field trial was investigated dry grind fermentation. Initial glucose content 141–150 g/L fermentability (glucose-to-ethanol conversion rate) 87–90%. rate among genotypes ranged 1.18 to 2.04 mL ethanol per litre hour The were categorised into four groups according endpoint 60–69 h, 70–79 80–89 h >90 h. All one sorghums produced final 9.47–9.76% v/v. Cultivars with high-starch low-protein most suitable due high achieved. yeast assimilable nitrogen not correlated starch content, protein fermentability, or consumption rate. Knowledge quality can pave way further research optimise solid-state production.
